  3. Peel and dice the potatoes. If you’re not cooking them right away, soak them in cold water to prevent browning.
  4. Heat oil in a wok or large skillet over medium heat. Increase the heat to medium-high and add the minced ginger and mushrooms. Cook for 2-3 minutes until fragrant.
