Olive Garden’s Creamy Mushroom Sauce – A Copycat Recipe

Are you a fan of Olive Garden’s delicious Creamy Mushroom Sauce Pasta? If you’re like me and can’t eat out every night, don’t worry! I’ve got you covered with my own copycat recipe for this mouthwatering mushroom Alfredo sauce.

A Flavor Explosion

Trust me when I say that my version of the creamy mushroom sauce is even better than the original. The flavors are on point, and even the kids agree! Plus, when you enjoy this dish at home, every meal becomes your very own Never Ending Pasta Bowl! Just whip up a quick salad with tangy Italian dressing, defrost some authentic Italian breadsticks, and voila! Don’t forget to pour yourself a glass of refreshing white wine 😉

The Ingredients

Let’s talk about what goes into the creamy mushroom sauce at Olive Garden. You’ll find the classic ingredients and flavors of a traditional Alfredo sauce: heavy cream, butter, pasta (linguini, fettuccine, shells, etc.), garlic, mushrooms, Parmesan cheese, and flour. Now, here comes the twist in my recipe. To make this mushroom sauce even more delicious, I use pre-made cream of mushroom sauce instead of cream or milk. This substitution not only simplifies the cooking process but takes the flavor to a whole new level.

How to Thicken the Sauce

Thickening sauces is a crucial skill for any home cook, and it’s easier than you might think. To thicken your mushroom sauce (or any sauce), all you need are a few tablespoons of flour slowly whisked into the mixture. Simple, right?

Let’s Get Cooking!

Before we dive into the recipe, make sure you have these kitchen tools on hand: a microplane for grating nutmeg, a saucepan, a sauté pan, a cutting board, a chef’s knife, and a trusty garlic press.

Here’s what you’ll need:

  • 16 ounces of sliced fresh White Button Mushrooms (or Shiitake)
  • 2 tbsp. of Extra Virgin olive oil
  • Three cloves of garlic, minced
  • 3 tbsp. of butter
  • 1 18-ounce can of Progresso Cream of Mushroom Soup (not concentrated)
  • 3/4 cup of Parmesan cheese
  • 2 tbsp. of chopped parsley
  • ½ tsp. of freshly ground nutmeg
  • 1 lb. of chicken tenderloins (1 package)
  • 2 tbsp. of parsley, plus more for plating
  • ¼ cup of sun-dried tomatoes (optional)
  • ½ tsp. of truffle salt (optional)
  • 2 tbsp. of flour (optional)

  1. Start by slicing the mushrooms and mincing the garlic.
  2. Take the chicken out of the package and generously season both sides with salt and pepper.
  3. Heat 1 tbsp. of olive oil in a sauté pan over medium-high heat.
  4. Add the sliced mushrooms and sauté them until they are halfway cooked.
  5. Introduce the minced garlic into the pan and cook until it becomes soft.
  6. Once the mushrooms are brown and soft, add 1 tbsp. of butter and let it melt. Remove from heat and set aside.
  7. In a saucepan over medium heat, pour in the can of cream of mushroom soup. Simmer it gently, then add the Parmesan cheese and cook until it melts and blends perfectly with the soup.
  8. Stir in the parsley and nutmeg.
  9. Allow the sauce to simmer for 5 minutes, and then add the sautéed mushrooms.
  10. If you prefer a thicker sauce, slowly add 2 tbsp. of flour while stirring.
  11. Optional: Add sun-dried tomatoes and truffle salt for an extra burst of flavor. If you’re not using these ingredients, taste the sauce and add salt to your liking.
  12. Move the sauce to a back burner and keep it on low heat, stirring occasionally to prevent the bottom from burning.
  13. In the same pan where you sautéed the mushrooms, heat another tbsp. of olive oil over high heat. Cook the chicken tenderloins for 3 minutes on each side. Once cooked, transfer them to a cutting board to rest.
  14. While the chicken is resting, cook your pasta to perfection. Don’t forget to add salt to the water!
  15. Once the chicken has cooled down, cut it into pieces and add it to the sauce, stirring well to incorporate.
  16. Finally, combine the pasta and sauce, sprinkle some parsley and extra Parmesan cheese on top, and serve. If some prefer a saucier experience, plate the pasta first and pour the sauce on top. Enjoy!
