There’s also a hint of wet rocks and a unique, funky dry jerky note. These aromas enhance the red fruit and floral characteristics that are typical of this grape variety. The presence of these funky undertones suggests a possible native fermentation, where wild yeasts spontaneously shape the wine.

Not many regions focus on single-varietal Senso. However, South Africa and Chile boast old vines that continue to thrive, untouched by the phylloxera infestation. Specifically, in the southern Chilean region of Itata, near the Pacific Ocean, these ancient Senso vines flourish. The cool Humboldt Current provides a moderating influence, prolonging the growing season and imparting a distinctive mineral edge to the wines. The granite-rich soils, infused with Quartz, lend additional character to the Senso’s expression.

In Itata, you’ll also find precious old Bush Vines, some over a century old. These venerable vines dig deep into the soil, seeking nourishment and water, resulting in wines of exceptional richness. Their complexity is a testament to the region’s devotion to preserving its winemaking heritage.

Meet DeMartino Gaillardius

Today, we celebrate DeMartino Gaillardius from Val Itata. They embrace minimal oak influence and champion the use of native fermentations. Their Itata estate produces limited production wines, drawing from the region’s historic vines and varieties.
