  • First, let’s prepare the peppers. In a large frying pan, heat a little olive oil and add the onion and peppers. Season with salt and pepper, then add a dash of sugar. Sauté over high heat for 4-5 minutes until the vegetables are soft and golden. You should hear a satisfying hissing sound from the pan, indicating that the pan is hot enough and the vegetables are sautéing properly.

  • Add the vinegar and let it bubble for a minute or two until it reduces and the peppers become tender. Reduce the heat, add a tablespoon of extra virgin olive oil, and continue cooking for an additional 2-3 minutes. Stir in the shredded basil and cook for another 30 seconds. Turn off the heat and transfer the peppers to a bowl to infuse with flavors. Clean the pan thoroughly, as we’ll be using it to cook the pork.

  • Using a sharp knife, make shallow cuts into the fat of the pork chops at 1½ inch intervals, taking care not to cut into the meat. This will prevent the meat from curling during cooking and ensure even cooking. Season the chops generously with salt and pepper, pressing the seasoning into the meat.

Prepping Fresh Ingredients

  • Place the cleaned pan over high heat until hot, then add a dash of oil. Add the pork chops, garlic, and thyme, and cook for 2-3 minutes until they develop a beautiful color. Flip the chops and cook for another 2-3 minutes on the other side, tucking the thyme under the chops and slightly breaking up the garlic.

  • Towards the end of the cooking time, add 3 chunks of butter and baste the chops with it, ensuring they stay moist and speeding up the cooking process. Push the fatty edge of the chops toward the back of the pan to render the fat. Squeeze the garlic out of its skin and place it, along with the herbs, on top of the chops.

  • Transfer the cooked chops to a plate and let them rest for 5-10 minutes, occasionally spooning over the basting butter.

  • Serve the chops on top of the peppers, drizzling them with the resting juices and a little of the pepper’s juice for an extra burst of flavor.
