Keto Shrimp And Grits

Discover the Magic Behind this Incredible Keto Shrimp And Grits Recipe

Southern recipes often share three common traits: they’re indulgent comfort foods, irresistibly tasty, and loaded with carbs. While I’m a huge fan of southern cuisine, the high-carb aspect doesn’t always align with my low-carb lifestyle.

As someone who appreciates the flavors of the South, I’ve taken it upon myself to transform carb-heavy dishes into keto-friendly alternatives. And that’s precisely what I did with this remarkable Keto Shrimp and Grits recipe.

I brainstormed for a low-carb and incredibly delicious substitute, ultimately deciding on cauliflower grits. Now, I know what you’re thinking – cauliflower, really? But trust me, when combined with butter, parmesan cheese, and the perfect cajun seasoned shrimp, these keto grits are nothing short of amazing. Let’s dive into the recipe!

Preparing the Perfect Keto Shrimp And Grits

  1. Start by cooking cauliflower florets until they are softened. Drain off any excess water.

  2. Add butter, cheese, salt, and pepper to the cauliflower and blend it together using an immersion blender. If needed, you can add a little cream to achieve the desired consistency.

  3. In a 10-inch skillet, heat butter on medium-low heat. Sauté garlic for about 30 seconds.

  4. Next, add shrimp, Cajun seasoning, and cream to the skillet. Cook until the shrimp are perfectly done, usually around 5 minutes. Finally, mix in lemon juice and parsley.

  5. Serve the deliciously cajun seasoned shrimp on top of a bed of cauliflower “grits.”

Tips And Tricks For Creating the Ultimate Keto Shrimp And Grits

  • If you prefer traditional grits and aren’t concerned about carbs, feel free to try my Cheese Grits recipe instead of the cauliflower grits.

  • Should the cauliflower grits turn out too thick, simply add a splash of cream to attain the desired consistency.

  • Be cautious not to overcook the shrimp! Overcooked shrimp can become tough and diminish the experience of this Keto Shrimp and Grits recipe.

  • Keep a close eye on the shrimp while they cook and remove them from the heat once they’ve uniformly turned pink and slightly curled.

Carb Content in Grits: A Comparison

A cup of regular grits contains a whopping 38 grams of carbs, with only 2 grams of dietary fiber. This results in a net carb count of 36 grams per cup.

In contrast, a serving of my deliciously keto grits has only 6 grams of carbs, with nearly 3 grams derived from dietary fiber. As a result, you’ll be left with a mere 3 net carbs per cup!

An individual serving of Keto Shrimp And Grits contains just 7 net carbs, allowing you to enjoy this southern classic guilt-free.
