How to Make Oven-Roasted BBQ Pork Loin
There are countless ways to serve pork loin, but today I’ll show you how to make a delicious Oven-Roasted BBQ Pork Loin using a simple rub and some apricot preserves. The rub has a touch of sweetness and is loaded with spices that add a delightful kick, which is perfectly complemented by the combination of the rub and the apricot preserves. Your taste buds are in for a treat!
The Flavorful Rub
Let’s start with the rub, which is a blend of brown sugar, paprika, garlic powder, onion powder, salt, pepper, chili powder, cayenne pepper, ginger, and cumin. The combination of these spices is absolutely delicious. You’ll have some rub leftover after seasoning the pork loin. Mix one tablespoon of the rub with the apricot preserves and save the rest for seasoning other dishes.
Seasoning the Pork Loin
When seasoning meat, I like to line my countertop with plastic wrap to make cleanup easier. Sprinkle the rub liberally on one side of the pork loin and then gently turn it over using the plastic wrap to keep your hands clean. Season the other side with more rub. Press the rub into the meat by lifting each end of the plastic wrap and pressing down. If you’re not roasting the pork loin right away, wrap it tightly and refrigerate until you’re ready to cook. Otherwise, proceed without wrapping the pork loin.
The Roasting Process
To achieve the best results, place one oven rack on the top position and another on the bottom or lowest position of your oven. The skillet should be placed on the lowest rack to ensure it gets super hot. By doing this, we eliminate the need for searing on the stovetop. Trust me, it’s not necessary for this recipe.
Place the seasoned pork loin in an oiled ovenproof skillet, preferably a cast iron one. Don’t worry if you have to curve the pork loin to fit. Then, place the skillet on the bottom rack and set the timer for 10 minutes.
Meanwhile, mix one tablespoon of the rub with half of the apricot preserves in a small bowl.
After 10 minutes, remove the skillet from the oven and flip the pork loin over. Spread half of the BBQ sauce over both sides of the pork loin, then place the skillet back on the bottom rack for another 10 minutes.
Remove the skillet from the oven and check the temperature by inserting a meat thermometer into the thickest part of the pork loin. It should read 137°F to 140°F after roasting for 20 to 25 minutes.
The Final Touch
Spread the remaining apricot sauce over the pork loin and turn the oven to broil. Place the skillet on the top rack and broil for 1 to 2 minutes until the sauce caramelizes.
Remove the skillet from the oven, transfer the pork loin to a cutting board, and let it rest for 5 minutes before slicing.
Spoon the sauce from the pan over the pork and serve.
Note on Cooking Temperature
